Whoopie Pies 

Cake Mix Cookies

1 box of chocolate cake mix
1/2 cup of vegetable oil
2 eggs

Preheat oven to 350 degrees.
Mix all ingredients together.
Drop by the spoonful on to a cookie sheet and bake for 8 -10 minutes

Butter Cream Frosting

1 cup butter, softened (2 sticks)
4-5 cups powdered sugar, sifted
1/4 cup milk
1/4 tsp all natural peppermint extract


Beat butter until creamy, scrape bowl. Add 4 cups of sifted powdered sugar, milk, and peppermint extract, beat until combined. Add more powdered sugar as needed to get piping consistency.

Note: If you do not want a mint flavored butter cream frosting, you can easily substitute vanilla or almond extract!

How to Assemble

Fill a pastry cone or plastic bag with the icing and attach your desired pastry tip. Pipe generously onto a cake round, covering the entire surface, and top with another cake round. You can pile on the frosting with a spoon and smooth out with a knife if you do not have a pastry bag or tip. Continuing this process until all the pies are assembled.

Note: I used about 1/4 cup of dough for each cookie and my pies were HUGE! I would suggest using about half that amount for a "normal" size cookie or whoopie pie. 😍
